It’s Wednesday once again! For this week’s What I Ate Wednesday post I’m going to show off all of the food at a vegan green brunch potluck I hosted on Sunday for Saint Patrick’s Day with my Montclair Vegans MeetUp group. A lot people attended, and all of the food was amazingly delicious. I really love seeing the creative dishes people bring to these events and I’m already looking forward to my next one!
Three bean salad – I’m not sure who made it.
Deana brought broccoli rate dish from Wild About Greens.
Fran made broccoli slaw.
Christina made a cabbage dish.
I made colcannon using potatoes and cabbage from this week’s co-op share.
Julie was visiting from Portland and brought a fruit salad.
John brought a dish made with tempeh, roasted red peppers and greens.
Fritz brought meatless-meatballs.
Fritz also made pesto.
I’m not sure who made this tasty potato salad.
Maria made a quinoa and spinach dish.
Karyn made scrambled tofu with greens and squash.
Maureen made Irish soda bread.
Eileen made spinach artichoke dip.
Amanda made a spinach pasta dish.
My plate was totally loaded with delicious food!
But there was still room for the yummy raw key lime pie I made for dessert.
Even Archie had fun!
