Happy Wednesday! I feel like I’ve taken a bit of a backtrack in my surgery recovery progress this week. I did far too much at the bake sale Montclair Vegans had over the weekend, and allergy season has me sneezing, which has strained my abdominal muscles. So this week I’m back to resting and relaxing. I have cooked a little bit, but we’ve also had some takeout. I’ve also been able to get myself out to see a few friends in the last week as well. For today’s What I Ate Wednesday I’m going to show off some random meals that I’ve eaten recently.
I made a quick and easy dish of Polenta with Kale and Cremini Mushrooms. The recipe is from Robin Robertson’s More Quick Fix Vegan and it was quite tasty.
Sometimes when I don’t feel like cooking, I go to the grocery store and pick up ready-made components that can be thrown together. In this case it was pre-made pesto, frozen ravioli and pre-cut veggies. This meal took about 10 minutes to prepare.
My typical lunch is a veggie wrap and a salad, but I like to mix up what goes into the wrap and what type of salad I make. In this case, I made a Thai Tofu and Veggie Wrap (recipe from Nut Butter Universe by Robin Robertson) and a kale salad with tahini dressing. (The dressing recipe is also from the top secret upcoming cookbook I’m testing for.)
On days that I just don’t feel like cooking, Dennis picks up take out. One day it was Tacos from Tinga in Montclair…
…and another it was veggie burgers from PositiviTea in Verona.
One day I got out to Uncle Moustache in Montclair (it’s actually now called Uncle Momo, but I prefer Moustache) for falafels and a bunch of other stuff with my friend Liz…
…and another night I went to see my friend Julie at Veggie Heaven in Denville, Julie moved to Portland a few years ago and was back in NJ visiting her family for Mother’s Day. We had sushi, spring rolls and some other yummy stuff.
