We’re smack dab in the middle of summer, and it’s far too hot to cook. I tend to eat a lot of salads and sandwiches in the summer months, both to help me stay cool and to avoid having to stand over a hot stove. It can be easy to get into a rut when making the same type of dish every day, so I’ve been looking for new recipes to keep my mealtimes interesting.
