When Lisa decided to go vegetarian on The Simpsons, Homer and Bart danced around chanting, “You don’t win friends with salad! You don’t win friends with salad!” Well, I’ve put together a Summer Salads e-book because I do win friends with salad.
When most people think of a salad, they think of a sad bowl of iceberg lettuce with chunks of tomatoes and a few slices of cucumber drowning in an oily dressing. That’s not how I make a salad. I use all kinds of vegetables, beans, add-ons, and yummy dressings.
I don’t want to give in to the cliché that vegans only eat salads. I eat everything from hearty lasagnas and pastas to filling sandwiches and stews. But I do love salad, especially in the summer when it’s too hot to cook, and my body wouldn’t want a hot meal anyway.
The recipes in this e-book are a few favorites from my blog. They’re all great as a meal on their own, or they can be served as a side along with grilled veggie burgers and corn on the cob. They’re also perfect to take along to potlucks and cookouts.
