I went vegan for the animals, but when I did so, I noticed a dramatic improvement in my health. I then decided to become a health coach so that I could share the healing powers of living vegan. In Mark Reinfeld’s new book Healing the Vegan Way, he too shares the healing powers of plant-based food.

Vegan newbies or those who hare new to cooking for themselves should start with the chapters that explain how to prepare your kitchen and cooking techniques chapters, where Mark shares tips on how to begin your foray into plant-based cooking. There’s also a chapter chockfull of pantry basics that will answer all of your questions about ingredients.
Mark has included recipes for just about everything you can imagine, from breakfasts, teas, and smoothies to salads, sides, and main dishes. There’s a chapter devoted to dressings and sauces, one for soups and stews, and another for desserts and sweet snacks. In the mood for an appetizer or savory snack? He has you covered there, too. He also includes recipe templates so you can create your own dishes.
I’ve made three recipes from Healing the Vegan Way so far. All were super quick and easy yet extremely tasty, and I already had most of the ingredients for each in my cupboard. I enjoyed the Curried Garbanzo Cakes with Poppy Seeds so much that I wish I had doubled the recipe. The Mushroom Cauliflower Tacos were a fun meal for Taco Tuesday. And the Truffled Cashew Cheese was so good that I might have licked the spatula I used to mix it. I have many other recipes bookmarked, so I know I’ll be cooking many more of this book’s tasty dishes in the weeks ahead.

Curried Garbanzo Cakes with Poppy Seeds from Healing the Vegan Way
- 1 cup garbanzo bean flour
- ½ cup water
- 1 ½ tablespoons minced fresh cilantro
- 1 ½ teaspoons poppy seeds
- 1 teaspoon garlic flakes
- 1 teaspoon curry powder
- 1 ½ teaspoons dehydrated onion flakes
- ½ teaspoon cumin seeds
- ½ teaspoon sea salt or to taste
- ½ teaspoon ground turmeric optional
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon ground coriander
- Pinch of cayenne pepper
- Oil for baking sheet (optional)
Preheat the oven to 375°f. Place all the ingredients, except the oil, in a bowl and mix well.
Scoop out eight equal balls onto a well-oiled or parchment paper–lined baking sheet, and form into small pancakes about ½ inch high.
Bake for 12 minutes, or until golden brown. Serve warm
