Not sure what to cook during the long holiday weekend? These recipes come together for one ultimate vegan Labor Day weekend menu! Many of them are grilled mains, while others are salads and side dishes. I've even thrown in a few cold drinks for good measure.

    Vegan Labor Day Recipes

    Vegan Labor Day

Labor Day weekend is almost here. It's the unofficial end to summer, as well as the unofficial beginning of comfort food season. (Hello, vegan mac and cheese!) Kids in my area start school next week and many people will be headed back to work after vacations and shortened summer hours. A good deal of Americans mark the holiday with trips to the beach, picnics, and backyard cookouts. I plan on spending lots of time outside grilling vegetables and enjoying icy cold drinks.

Vegans can sometimes have a difficult time at barbecues, as they tend to be very meat-laden. I like to host my own veggie-cues, so I don't have to worry about what's been cooked on the grill along with my food, and I can control what ingredients are go into the dishes. If I'm going to someone else's house for a cookout, I'll take a few sides, such as vegan potato salad and quinoa salad, so I know that there will be something I can eat.

    For the Grill

sandwiches on plates with corn and salad

Brightly flavored lemon-rosemary marinade is the star of this Grilled Tofu Sandwich.

Grilled Tofu Skewers on a plate with salad and water

Grilled Tofu and Pineapple Kebabs are always fun at cookout parties. There’s something magical that happens when pineapple meets the grill.

    close up of sandwich

This Grilled Ratatouille Sandwich is the ultimate way to enjoy summer’s vegetable harvest.

    Grilled Eggplant Sandwiches with vegetables

Topped with onions and peppers, this Grilled Eggplant Sandwich has become a summertime favorite in my house.

eggplant wraps in dish with tahini dressing

If you prefer wraps to sandwiches, try these tasty Grilled Eggplant Wraps with Spicy Tahini Slaw, which were inspired by one of my favorite pre-made meals from Trader Joe's.

    drizzling sauce on vegetables

Not sure what to do with all of that zucchini and summer squash in your garden? Grill it up and serve it with my Easy Romesco Sauce!

platter with corn, tomatoes, parsley, sauce, parmesan, and limes

You can't have a cookout with corn on the cob, and this Street Fair Corn from NYC Vegan by Michael Suchman and Ethan Ciment is my favorite way to make it.

    Vegan Salads for Labor Day

two salad with tomatoes, garlic, and dressing

This vegan Grilled Wedge Salad is the perfect light meal for warm evenings, and it makes a great appetizer, too.

overhead of two bowls of salad with peaches

Peaches taste amazing when barbecued, and hearty tempeh holds up well on the grill. They pair together well in this Grilled Tempeh Salad with Peaches and Pistachios.

two bowls of Cruciferous Crunch Salad with tomatoes, and brussels sprouts

Move over coleslaw – Cruciferous Crunch Salad is destined to become everyone’s favorite cookout side dish!

bowl of potato salad with fork and spoon

Potato salad is another must-have for cookouts, and this Vegan German Potato Salad is always a hit.

    quinoa salad bowl

Springtime Quinoa Salad can be a meal all on its own, but it's also a great side dish.

    Vegan Drinks for Labor Day

two glasses of sangria with pitcher, lemon, and strawberries

Chill out this weekend with an ice cold glass of refreshing Strawberry Lemon Sangria.

    pitcher of lemonade

If you prefer non-alcoholic drink, pour yourself a glass of chilled Lavender Lemonade.
