I’m not sure when I first heard of Herbivore Clothing, but I know it was well over 10 years ago, and I think my friend Val may have been the one who did the introductions. I remember gleefully pulling their magazine (aptly titled Herbivore) out of my mailbox each time it arrived and devouring every word of it. I used to proudly wear my Herbivore t-shirt to work on Causal Fridays to the glares of my fashion-minded omnivore coworkers. It was a blue shirt with the word “herbivore” written in white on a red cross across the center. I still have it, even though I’m pretty sure it’s considered contraband now. I think I first met Herbivore’s Michelle Schwegmann at the New York City Vegetarian Food Festival in 2011 or 2012, and since then I look forward to seeing her at other veg fests and vegan events here and there. So when I heard that Michelle and her husband Josh Hooton were working on a cookbook, I just couldn’t wait to get my hands on it.
Eat Like You Give a Damn by Michelle Schwegmann & Josh Hooten is chock-full of everyday family recipes – the kinds of meals that busy people cook at the end of along work day. On their website Michelle and Josh say that “Eat Like You Give A Damn is pretty much our home food diary, every day, all year long.” The recipes are easy to make, full of delicious flavor, kid-friendly, and of course, all vegan. The book contains recipes for kitchen staples, such as dressings and sauces, easy breakfasts (including several tofu scrambles!), lunches, main dishes, side dishes, and baked goods.
The book starts with Michelle and Josh sharing their vegan stories, a list of reasons why you should give damn, a little nutrition primer from Ginny Messina, MPH, RD, tips on raising vegan kids, and a list of items that are handy to have in your pantry. There’s also a great list of responses to use to common annoying questions that vegans are asked, such as “Don’t you care about plants? Plants have feelings too.” I may photocopy these pages and keep them in my handbag at all times.
If you’re around Michelle for any length of time, you’ll notice how friendly and fun she is, and that spirit shines through in this book. Veganism can be a serious subject, but Eat Like You Give a Damn makes it fun to eat (and live) this way. The book is full of the sass and sense of humor we’ve all come to know Herbivore Clothing for, as well as Josh’s gorgeous design sense, which has always been evident in their t-shirts and accessories. This book is everyone who wants to eat like they give a damn!
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons reduced-sodium tamari
- 2 tablespoons nutritional yeast flakes
- 1 tablespoon flax meal
- 2 teaspoons onion granules
- 1 teaspoon garlic granules
- 1/4 cup water plus more as needed
- 9 cups torn curly kale leaves about 1 bunch, in bite-sized pieces (see tip)
- 1/3 cup hemp seeds or chopped
- raw sunflower seeds optional
To make the dressing, put the tahini, lemon juice, tamari, nutritional yeast, flax meal, onion granules, and garlic granules in a large bowl (large enough to accommodate the kale leaves). Add the water and whisk to combine, adding more water if the dressing seems too thick. (Tahini varies in consistency.)
Add the kale leaves to the dressing and mix using your hands. Don’t be shy now! Rub the dressing into the kale and make sure to distribute it evenly. Sprinkle the optional hemp seeds over the top if desired. Serve immediately or store in a covered container in the fridge for up to 2 days.
Tip: Before you get started, you’ll need to clean and prepare the kale. Hold the stem of a kale leaf in one hand, and with your other hand pull the leaf up the stem. When you’ve removed all the leaves from the stems, tear the leaves into bite-sized pieces (you can com- post the stems). Give the leaves a good bath in cold water, and spin them dry in a salad spinner.
