I can’t believe Thanksgiving is just a few days away! How did it sneak up on me like that? I’ve actually been cooking up Thanksgiving dishes all month, but it has seemed like the day would never really arrive. I’m often asked what vegans eat for Thanksgiving, and my answer is usually “food”! Most of the vegans I know take Thanksgiving very seriously, and plan their menus way in advance with the use of charts, lists and spreadsheets. If you are not one of them and are are still looking for some recipes, here are some suggestions:
Harvest Salad with Pumpkin Vinaigrette Many Thanksgiving tables are full of food that are rather brownish in hue. Make sure you get plenty of color into your meal by starting out with this fall-themed salad.
Roasted Kabocha Soup This squash soup will had a spicy flair to your meal.
Pan Seared Brussels Sprouts with Caramelized Shallots and Toasted Pistachios Brussels sprouts are finally getting the respect the deserve and this dish is sure to win over any sprout haters at your dinner table.
Creamed Kale This dish only takes a few minutes to throw together, so you might want to make a double batch because it will disappear quickly.
Spinach Mushroom Stuffing I used to really dislike stuffing, but I’ve grown to love it. I’ve been known to eat this for breakfast the day after Thanksgiving.
Pumpkin Baked Ziti Pasta isn’t traditionally thought of as a Thanksgiving dish, it’s been showing up on the table more and more throughout recent years. The pumpkin and pecans in this recipe give it a fall feel, and the tofu ricotta tastes close enough to the “real” thing that even omnivores will enjoy it.
Stuffed Portobello Mushrooms These stuffed mushrooms are hearty enough to serve as main dish, but can also be served as a side.
Stuffed Acorn Squash Stuffed squash the perfect main dish for Thanksgiving – it’s rather tasty and it looks quite nice on the the table.
