Father’s Day is coming up soon, and just like with any other holiday, most of us will be celebrating with food. Since Father’s Day falls right in the middle of June, it’s common to celebrate with a barbecue. People don’t always think of that the grill and vegetables go well together, but they’re actually a match made in heaven. Think grilled eggplant sandwiches with corn on the cob or tofu skewers and kale slaw.
If you don’t have a grill or if rain is in the forecast, don’t worry – I’ve included recipes that can be made indoors, too.
