Whole Wheat Soda Bread – you don’t need to wait until St. Patrick’s Day to enjoy this vegan version of traditional Irish soda bread! Nibble on it for breakfast along with a Shamrock Shake or snack on a few slices in the afternoon along with a cup of hot tea. This brown bread recipe is easy to make and freezes well.
Vegan Soda Bread
This time last year I had just finished Fran Costigan’s Essential Vegan Baking Course. Before then, I had been baking for years but I was still a little uncomfortable creating my own recipes for baked goods. Through the course, I gained a lot of confidence, and my first post-class baked good recipe was for vegan soda bread. Using a method I learned in the class, my recipe was made with a mixture of all-purposed flour and whole wheat pastry four. It baked up soft, fluffy, and delicious.
Whole Wheat Soda Bread
While I do still love that recipe, I’ve been wanting to adjust it a little. I wanted a version that was made just with whole wheat flour, and I wanted to incorporate some seeds or dried fruit for texture. I came across a recipe for seedy whole wheat soda bread while flipping through an issue of Woman’s Day magazine recently. It seemed like just what I was looking for, but, of course, it wasn’t vegan. I headed into the kitchen, determined to veganize it.
Since I knew that my soda bread recipe already worked, I decided to play with it a little, using just whole wheat flour and adding in seeds. The end result was exactly what I had been hoping for – soft, fluffy, and seedy!
Vegan Whole Wheat Soda Bread is Easy to Make!
This recipe bread is super easy to make!
- First you clabber the soy milk by combining it with the apple cider vinegar in a small bowl. Allow the mixture to sit for 5 to 10 minutes. It will look curdled, which is what you want.
- Then you mix in the flour, baking soda, seeds, and salt.
- Finally you brush on a little aquafaba and sprinkle on more seeds and rolled oats.
- And then bake your bread for 35 for 45 minutes!
When making this recipe, make sure you use soy milk or almond milk. Other types of nondairy milks won't clabber properly.
Aquafaba is the liquid from a can of chickpeas. I use it as “glue” for the seeds on top of the loaf. I always have a little on hand in the freezer in case I need to use it when baking. If you don’t have any handy, use a little soy or almond milk instead.
St. Patrick’s Day
Baking soda bread is a St. Patrick’s Day tradition for me, but that doesn’t mean it’s the only time I make it. You can enjoy this treat any day of the year! I like to spread a slice with a little Miyoko’s vegan butter and blueberry jam and nosh on it when I’m feeling a little peckish. It makes great sandwiches, too!

Vegan Whole Wheat Soda Bread
Ingredients
- 2 cups almond or soy milk
- ¼ cup apple cider vinegar
- 3 cups whole wheat flour
- 1 ⅛ teaspoon baking soda
- 1 teaspoon sea salt
- ¼ cup plus 1 tablespoon sunflower seeds divided
- 2 tablespoons plus 2 teaspoons flax seeds divided
- 1 teaspoon aquafaba (liquid from a can of chickpeas or white beans)
- 1 tablespoon rolled oats
Instructions
- Adjust your oven rack so it’s in the middle position and preheat to 425°.
- Lightly oil a 9-inch round baking pan.
- Clabber the soy milk by combining it with the apple cider vinegar in a small bowl. Allow the mixture to sit for 5 to 10 minutes.
- Combine the flours, baking soda, and salt in a large bowl, and whisk to combine.
- Add the clabbered soy milk to the dry ingredients, and mix with a wooden spoon or rubber spatula until just combined. The mixture will be sticky.
- Fold ¼ cup of sunflower seeds and 2 tablespoons of flax seeds.
- Scrape the mixture into the prepared baking pan. Brush the top with the aquafaba and sprinkle on the remaining sunflower seeds, flax seeds, and the rolled oats. Use a large serrated knife to cut a large “x” into the dough, about 1” deep. You may need to wipe the knife with a damp cloth between cuts.
- Bake for approximately 35-45 minutes, until the bread has risen and is golden brown.
- Place the pan on a cooling rack for 10 minutes. Carefully remove the bread from the pan, and place on the cooling rack and allow to completely cool.
