Harvest Salad with Pumpkin Vinaigrette

Ingredients

For the Salad

  • 1 large head of romaine lettuce, chopped
  • 2 carrots, shredded or julienned
  • 4 - 6 mushrooms, sliced
  • 1 apple, sliced
  • 1/2 cup Corn kernels, sliced fresh from one cob, if possible
  • 1/4   cup pumpkin seeds, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup toasted pecans, chopped

For the Dressing

  • 1/2 cup pumpkin puree
  • 1/4 cup apple cider vinegar
  • 1/4 cup good quality olive oil
  • 2 tablespoons water or vegetable stock
  • 3 or 4 fresh sage leaves, minced
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toss all of the salad ingredients together in a large bowl.

  2. Whisk all of the dressing ingredients together in a small bowl until combined.

  3. Add the dressing to the salad and toss to combine.
