Ingredients

  • 3 1/4 cups Unsweetened So Delicious Organic Almondmilk with Cashews divided
  • 2 tablespoons raw cacao powder or cocoa powder
  • 4 medjool dates pitted, divided
  • 3/4 cup chia seeds divided
  • 3 cups frozen cherries thawed, divided
  • ½ cup raw cashews
  • 1 teaspoon vanilla extract
  • 2 tablespoons cacao nibs

Instructions

  1. In a blender or food processor mix together 1 cup Unsweetened So Delicious Organic Almondmilk with Cashews, the cacao powder, and one of the dates until smooth and creamy. Pour the mixture into a small bowl or jar, and mix in ¼ cup of the chia seeds until well incorporated. Cover and place in the fridge for 4 hours or overnight.
  2. Rinse out your blender or food processor. Blend together 2 cups of Unsweetened So Delicious Organic Almondmilk with Cashews, 2 cups of cherries, and 2 dates until smooth and creamy. Pour the mixture into a small bowl or jar, and mix in 1/2 cup of the chia seeds until well incorporated. Cover and place in the fridge for 4 hours or overnight.
  3. Rinse out the blender or food processor. Blend the remaining 1/4 cup of Unsweetened So Delicious Organic Almondmilk with Cashews, the last date, the cashews, and the vanilla extract until smooth and creamy. Pour the mixture into a jar or bowl and place in the fridge until ready to use.

  4. When ready to serve, layer the chocolate pudding, cherry pudding, and cashew cream into bowls or serving dishes. Top with the remaining cherries and cacao nibs.
