Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • ½ teaspoon sea salt
  • ¼ teaspoon oregano
  • ¼ teaspoon basil
  • ½ teaspoon black pepper
  • 1 large ripe avocado diced
  • 1 cup cooked chickpeas
  • 1 cup cherry or grape tomatoes cut in half
  • 2 scallions thinly sliced
  • ¼ cup flat leaf parsley chopped

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, oregano, basil, and black pepper.
  2. In a large bowl, gently mix together the avocado, chickpeas, tomatoes, scallions, and parsley.
  3. Pour the dressing over the salad and gently mix to coat.
  4. Refrigerate for an hour or two to allow the flavors to mingle together before serving.
