  • 1 tablespoon neutral-flavored oil
  • 2 shallots , diced
  • 16 ounces crimini or white button mushrooms , sliced
  • teaspoon fresh thyme
  • ½ cup all-purpose flour , whole wheat flour, or gluten-free flour
  • 4 cups vegetable stock
  • 1 cup dry white wine
  • ¼ cup cornstarch
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

  1. In a large pot over medium-high heat, heat the oil and add the shallots, mushrooms, and thyme. Cook them, stirring frequently, for about 10 minutes, or until they soften and brown. Stir in the flour, and cook for 2 or 3 more minutes, or until it begins to brown.
  2. Whisk in the vegetable stock, wine, and cornstarch and bring the mixture to a boil. Lower the heat to medium-low and allow the gravy to simmer until it thickens, about 15 minutes.
