Vegan Peanut Butter Bread

Vegan Peanut Butter Bread is super easy to make! You just mix everything together, pour it in a pan, and bake! Add ingredients such as dried fruit, chopped nuts, and chocolate chips to vary your bread. Use different types of nut butters to change the flavor. Homemade bread is a great snack, and you can even enjoy a slice for with breakfast or for dessert.

Ingredients
  

  • 2 cups whole wheat flour or all-purpose gluten-free flour mix
  • ¼ cup organic sugar such as sucanat or coconut palm sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup natural nut butter try peanut butter, almond butter, or sun butter
  • 1 ¾ cups unsweetened nondairy milk
  • ¼ cup chopped nuts optional
  • ¼ cup dried fruit optional
  • ¼ cup nondairy chocolate chips optional

Instructions
 

  • Preheat your oven to 350° and lightly oil an 8x4-inch loaf pan or line it with parchment paper.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • Add the milk and nut butter to the bowl and mix until combined. Do not overmix. The batter will be thick.
  • Gently fold in the nuts, dried fruit, and chocolate chips, if using.
  • Pour the mixture into your prepared loaf pan and smoothe top with a large spoon or spatula. Bake until the bread until it is golden brown around the edges and toothpick inserted in the center comes out clean, about 45-55 minutes.
  • Place the loaf pan on a wire rack and allow the bread to cool for 10 minutes before carefully removing it from the pan.

Notes

Chocolate Peanut Butter Bread: Use chocolate nut butter instead of plain peanut butter.
Chocolate Chip & Cherry Almond Bread: Use almond butter instead of peanut butter. Add ¼ cup each of chocolate chips, dried cherries, and chopped almonds.
