2tablespoonsbalsamic vinegar(the fruitier the better)
1teaspoonDijon mustard
½teaspoonsea salt
¼teaspoonblack pepper
5ouncesbaby spinach(about 5 cups)
1avocadodiced
1pintstrawberrieshulled and sliced
1cuptofu feta
¼cupwalnutstoasted and coarsely chopped
Instructions
Whisk together the olive oil, vinegar, mustard, salt, and pepper.
