- 1 small onion, chopped
- 5 ounces crimini or white button mushrooms sliced (6 to 8 mushrooms)
- 3 cloves garlic minced
- 14 ounce can chickpeas
- 14 ounce can diced tomatoes
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- ½ cup vegetable stock
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Combine all ingredients in slow cooker and cook on low for 6 to 8 hours.
Server over pasta, brown rice or quinoa.
