No one will miss the meat with these vegan veggie burger recipes! These homemade veggie patties are perfect for Memorial Day, Independence Day, and Labor Day—or any day really! I have all of your burger cravings covered with black bean burgers, chickpea burgers, tofu burgers, lentil burgers, quinoa burgers, and more! They’re all vegan, and most are gluten-free.
The Veggie Burger
When I went vegetarian waaaaaay back in the 90s, there was only one brand of veggie burger available in mainstream grocery stores. It was made by Green Giant, and the taste resembled the cardboard box it came in. Still, I bought it frequently. I dressed my burgers up with all sorts of fixin’s, from pickle slices and lettuces leaves to sautéed mushrooms and roasted red peppers.
Flash forward to today, and there are so many veggie burgers available I’ve lost track. Such is a good problem to have! We have black bean burgers, kale burgers, and even meat burgers that are said to “bleed.” (Gross!)
I’m all for convenience foods, but sometimes they’re a little too processed for my tastes. I mean, what exactly is methylcellulose? I’ll take my burgers without the thiamine mononitrate, thank you very much!
So I like to make my own. When I get a chance, I’ll make a big batch and freeze some, so they’re ready when I’m hungry. To do so, you just need to wait until your cooked burgers have cooled. Then you place a piece of parchment paper or wax paper between them and then pop them in the freezer in a sealed freezer bag or air-tight container. Once you’re ready to eat them, thaw them on the counter and reheat by baking them in the oven for a few minutes or pan frying them.
