    Vegan Greek Pizza with Tofu Feta

    Vegan Greek Pizza with Tofu Feta will help you change up your pizza game!  Made with toppings like nondairy tofu feta, spinach, artichoke hearts, and Kalamata olives, this pizza is full of flavor and is always a crowd pleaser. Skip the takeout, because homemade is so much better than delivery. This vegan recipe is easy to make.

    Vegan Pizza

    As an omnivore, pizza for me used to be crust, tomato sauce, cheese and a topping – pepperoni when I ate meat and mushrooms while I was a vegetarian. Now as a vegan, pizza has become much more creative and flavorful. Who says we need to stick to the rules of using tomato sauce and cheese? Why not put chickpeas and tahini on a pizza? This recipe was inspired by my favorite lunchtime Greek salad.  And don't think that I've never put salad on a pizza, because of course I have! I like to make pizza once a week or so, and I always like to mix things up.

    How to Make Vegan Greek Pizza

    This pizza is super easy to make!

    • If your crust requires preheating, do that before you make the toppings.
    • First you heat the oil in a pan and cook the onion for about 5 minutes.
    • Then you add the garlic and cook for another minute or two.
    • Next you add the chopped spinach and cook for just a minute or two more, until it wilts.
    • Now you assemble the pizza by spreading the tomato sauce over the crust. You top the sauce with the spinach and onion mixture, and then layer on the rest of the toppings.
    • Then you cook your pizza for 10 to 12 minutes, or until the crust is done and the toppings are hot.
    • Finally you drizzle on the tahini and slice your pie into 8 pieces.

    How to Customize your Greek Pizza

    You can easily alter this pizza to your liking!

    • Add vegan mozzarella instead of Tofu Feta.
    • Use baby kale or arugula instead of spinach.
    • Add different vegetables, such as roasted red peppers or sautéed zucchini.
    • Use slices of large vine ripe tomatoes instead of cherry tomatoes.
    • Top your pizza with sliced fresh basil.

    I like to use my homemade tofu feta in this recipe. You can also use store-bought. Violife makes a good nondairy version.

    Pizza Crust

    If you like to make your pizza crust and you have a recipe you like, go for it! I personally don't like working with dough. I'm not really sure why. Maybe it's because it seems to have a mind of its own? I do have an easy recipe for pizza dough in my cookbook Eating Vegan, but most of the time I pick up premade whole grain dough at Whole Foods or Trader Joe's. Dennis usually rolls it out while I prepare the pizza toppings.

    Greek Pizza with Tofu Feta

    Ingredients
      

    • 15" prepared pizza crust
    • 1 teaspoon neutral-flavored oil
    • ½ red onion diced (about ½ a cup)
    • 2 garlic cloves minced
    • 5 ounces baby spinach chopped
    • ½ cup tomato sauce
    • 1 cup Tofu Feta
    • 1 cup grape or cherry tomatoes sliced in half
    • 4 or 5 pepperoncini peppers sliced
    • 2 artichoke hearts chopped
    • ½ cup cooked chickpeas
    • ⅓ cup kalamata olives chopped
    • Sprig of chopped fresh oregano or a sprinkle of dried
    • ½ cup Lemon Tahini Dressing

    Instructions
     

    • Preheat your oven to 450° F. Preheat your crust, if necessary.
    • Heat the oil in a pan over medium-high heat. Add the onion and cook for about 5 minutes, or it begins to brown. Add the garlic and cook for another minute or two. Then add the chopped spinach and cook for just a minute or two more, until it wilts.
    • Spread the tomato sauce over the crust, and then top with the spinach mixture. Layer on the rest of the ingredients with the exception of the tahini sauce.
    • Cook for 10-12 minutes.
    • Drizzle on the tahini sauce and slice into 8 pieces. Serve hot.
