I love all meals, but if I had to pick a favorite, it would be be brunch. I just love vegan brunch food – I love scrambles, waffles, omelets, and hash browns. Brunch is usually reserved for weekends and holidays, because no one really has time to make big meals that early on a weekday.
I like to celebrate New Year’s Day with a big brunch. After staying up late to watch the ball drop and ring in the new year with champaign and snacks, it’s nice to sleep in and then wake up to a big breakfast waiting for me. I like to prepare the food the day before so that I don’t have too much to do in the morning.
To help usher in 2017, I’ve put together list of my favorite vegan brunch recipes – some are mine and some come from friends. These breakfast recipes are also great for Easter, Mother’s Day, or any random Sunday when you’re craving a savory spread. They’re terrific for brinner (breakfast for dinner) too!
